Carrot Ginger Soup Recipe
2 pounds carrots, peeled and chopped
4 Tablespoons minced fresh ginger
2 shallots, minced
2 cloves of garlic
4 cups vegetable or chicken broth
1 teaspoon salt
1/2 teaspoon coriander
2 Tablespoons olive oil
Thinly-sliced green onion or fresh basil for garnish.
Heat the olive oil over medium high heat. Add shallots and garlic. Saute until tender, about 5 minutes. Add ginger. cook for another 3-4 minutes. Add carrots, broth, coriander and salt.
Bring to a boil. Reduce heat to a simmer and cook for 10-15 minutes until carrots are tender.
Carefully transfer to a blender and puree. Garnish with green onions or basil and enjoy!
